Overall Rating

The Chemex has been in the Museum of Modern Art for decades. We tested the 8-Cup version for multi-cup pour-over brewing.

The Pour-Over That Looks Like Art and Brews Like a Specialty Cafe

The Chemex Pour-Over Classic 8-Cup Coffeemaker is instantly recognizable — hourglass borosilicate glass with a wooden collar tied with leather. Designed in 1941 by Peter Schlumbohm (a chemist), it's been permanently exhibited at the Museum of Modern Art for decades. Beyond the aesthetic, the Chemex brews clean, light-bodied pour-over coffee using specialty-grade paper filters that are thicker than standard pour-over.

Short answer: For pour-over enthusiasts who host or brew multi-cup batches, Chemex is the right choice. The thick proprietary filters catch significantly more fines and oils than standard paper, producing cleaner cups. The 8-cup size brews 40oz (~5 actual servings) in one go. At ~$45 for the vessel + ~$10 for filters, it's a premium pour-over investment.

Why Chemex Filters Are Different

Standard V60 filters: thin paper, allows oils through for fuller body. Chemex filters: 20-30% thicker bonded paper, removes more oils for cleaner cup.

Result: Chemex coffee tastes lighter and cleaner than V60 coffee with the same beans. Some love it; some find it "too clean."

Brewing Process

  1. Grind 55g coffee medium-coarse
  2. Fold Chemex filter (pre-scored)
  3. Insert into top, rinse with hot water
  4. Pour off rinse water
  5. Add grounds
  6. Bloom: 80g water, 30-45 seconds
  7. Main pour in 3 slow spirals: 200g → 400g → 600g total
  8. Brew time: ~4-5 minutes
  9. Remove filter, serve

Who This Is For

Good fit:

  • Pour-over drinkers who prefer cleaner cup profile
  • Hosts brewing for 2-4 people
  • Aesthetic-conscious kitchen setup
  • Light-roast specialty coffee enthusiasts

Not ideal:

  • Single-cup brewers (8-cup is oversized)
  • French press body preferrers
  • Those who dislike buying branded filters
  • Households with rough handling (glass is delicate)

Pros and Cons

Pros: Distinctive design is an aesthetic centerpiece, cleaner coffee profile than alternatives, 8-cup size serves multiple people in one brew, made in USA with lifetime warranty, iconic mid-century design

Cons: Proprietary filters required (~$10 per 100), glass is fragile, doesn't keep coffee warm after brewing, harder to pour from (wider base), premium pricing for a brewer that's "just" glass

FAQ

Can I use V60 filters in a Chemex? No. Chemex filters are thicker and specifically sized. V60 filters will collapse or leak.

What grind size? Medium-coarse. Coarser than V60, finer than French press.

How do I clean it? Remove collar (slides off with leather tie), rinse glass, dishwasher-safe bowl. Keep collar dry.

Does it work with light roasts? Excellent for light roasts. The cleaner filter profile lets delicate fruit notes shine.

What happens if I skip the rinse? Papery taste from filter residue. Always rinse.

Lifetime warranty on glass? Against manufacturing defects, not user damage (drops, thermal shock).

What about the Chemex Ottomatic? Automated version (~$300). For home users, manual pour is the experience.

Bottom Line

The Chemex is the right pour-over for multi-cup brewing where the cleaner profile is desired. It's also a display piece. At ~$45 + filters, it's premium but justified — a 1941 design that's still relevant in 2026.

For single-cup pour-over, a $25 V60 is a better fit. For 2-4 person households brewing together, Chemex is the right size.

Our rating: 4.5/5 — Docked for proprietary filter dependency and glass fragility. Otherwise, timeless excellence.
